These anchovies are a real delicacy. The little fish are filleted by hand the same day as they are fished which keeps the freshness of their taste and the rose colour of their flesh. In small doses anchovies are added to lots of other dishes to give flavour. The best way to eat them is directly in a hot bread roll with a drizzle of olive oil.
